Lasagna is a wide flat pasta, and creating the casserole requires layering several ingredients and sauces between layers of pasta. The dish originated in the Emilia-Romania region of Italy, known for its meat-based tomato sauce called "ragu," a white sauce called béchamel, and Parmesan cheese. The first mention of the dish occurs early in the 14th century in the cookbook "Liber de Coquina."
